Turkey's authority on gluten-free hotels

A gluten-free holiday should rest on audits, not guesswork.

We audit hotels in Turkey on site, right down to the kitchen, for coeliacs and gluten-free travellers. 35 criteria, from separate preparation areas to serving tongs, unannounced checks and public certificate verification.

Around 1 in 100 people worldwide has coeliac disease; most have not yet been diagnosed.

20ppm

The international limit for "gluten-free": no more than 20 milligrams of gluten per kilogram.

35criteria

The number of points in our audit standard, from sourcing to service, open for anyone to read.

365days

Every certificate is valid for one year, with at least one unannounced check during that time.

Separate, covered gluten-free section at a hotel buffet
A separate table, covered containers and separate tongs for every item: mandatory criteria for the Gluten-Free Safe level.

The problem

"We have gluten-free bread" isn't enough.

For a coeliac, a single crumb can mean spending the rest of the holiday in bed.

Most hotels mean well. But a kitchen that warms gluten-free bread in the same toaster as ordinary bread, boils gluten-free pasta in the same water, or passes the same tongs around the buffet isn't safe, whatever the menu says. We don't look at the menu; we look at the kitchen itself.

  • "Gluten-free" chips cooked in a shared fryer
  • Sauce thickened with wheat starch, meatballs made with semolina, floured calamari
  • A gluten-free slice in the same basket as ordinary bread

Three levels, one standard

Choose a hotel by the level that suits your sensitivity.

Each level has mandatory criteria. Even with a high score, a level is not awarded if a single mandatory criterion is missing.

1 Gluten-Free Friendly

Gluten-Free Friendly

Gluten-free options are offered regularly, staff are trained, and basic precautions against cross-contamination are in place.

Who it's for: Guests with gluten sensitivity who can holiday with light restrictions.
Threshold: a score of at least 60% + all mandatory criteria

2 Gluten-Free Safe

Gluten-Free Safe

Separate preparation area, colour-coded equipment, a separate buffet section and written procedures. Suitable for guests with coeliac disease.

Who it's for: People with coeliac disease and families with coeliac children.
Threshold: a score of at least 75% + all mandatory criteria

3 Coeliac Expert

Coeliac Expert

A separate gluten-free kitchen or enclosed preparation unit, laboratory testing (<20 ppm), a dietitian-approved menu and a full choice at every meal.

Who it's for: Highly sensitive coeliacs and guests who expect "zero risk".
Threshold: a score of at least 90% + all mandatory criteria

For hotels

Your gluten-free guests want to trust you.

Coeliac guests spend months researching hotels, return year after year to the ones they're happy with, and tell everyone they know. An approval certificate is the quickest way to prove you deserve that trust.

FAQs

Common questions

Is the Glutensiz Tatil Approval Certificate an official certificate?
No. It is not a legal certificate issued by a public authority but an independent, second-party verification programme. We audit hotels on site against a public standard and publish the result so it can be verified by certificate number. Obligations under food law remain with the hotel itself.
Is there no risk at all in a certified hotel?
No kitchen can guarantee zero risk. The certificate shows that, on the date of the audit, the hotel had set up and was maintaining systems to prevent cross-contamination. We advise coeliac guests to always restate their needs when booking and on arrival.
What's the difference between the levels?
Gluten-Free Friendly requires basic precautions, Gluten-Free Safe a separate preparation area and equipment, and Coeliac Expert a separate kitchen or enclosed unit plus laboratory testing. The mandatory criteria for each level are set out clearly on the Audit Standard page.
How can I tell if a certificate is genuine?
Every certificate has a number in the format GT-YYYY-NNNN and a QR code. Enter the number on the "Verify Certificate" page and you'll instantly see whether it is valid, suspended or revoked.
What should I do if I have a problem at a hotel?
Fill in the "Report your experience" form. We review every report and carry out an unannounced audit at the hotel when needed. For serious breaches the certificate is suspended, and this is shown publicly on the verification page.
