The Muğla coast is known more for boutique hotels and guesthouses than for large resorts. In a small hotel it is easy to talk to the chef directly, which is a big advantage for guests with coeliac disease. On the other hand, small kitchens may not have a separate fryer or a separate work surface.
A seafood-heavy cuisine looks gluten-free friendly at first glance. However, most fried dishes such as squid, red mullet and anchovies are coated in flour, and anything cooked in the same oil carries a risk. Asking for grilled fish “on a separate grill, with no flour and no sauce” is a good start.
